very nice . i just got a big chief smoker for my birth day yesterday . i am making my first batch of jerky tomoral any suggestions you can give a first timmer.
@cslr11 Make sure you keep track of your temperature. I start mine around 130-145 degrees for the first 2-3 hours then raise it to 170 until the jerky is done an about 6-7 hours total. This time can change greatly based on air flow with your specific smoker. Based on the outside temp you might have to use a cardboard box over the top or something to get your temp high enough. Wind can be a big problem if the smoker is out in the open. Good luck
@delmole85 iam going to build one of these for my sausage. i like the looks but that handle has got to go lol. you should make a nice wooden one to match. looks like you built a square box then cut the door out with a jig saw by the rounded corners.
@scottgeiger88 I put the metal handle on it because it was available. Maybe I will take it off and spray paint it gold to match the brass hinges haha. You are right about how i cut out the door. It was the easiest way to make sure it sealed well.
@delmole85 haha i think drove by a church that was putting on a new roof and i ask if i could have the scrap ones. went to menards and got the car siding out of there bargain bin for 29 cents a 4 foot stick. i had the stain already just had to buy the hinge and latches for about 12 bucks. i have a picture of it on facebook but it wont let me copy and paste the link on here
@scottgeiger88 I had to do the exact same thing! I cut them down a 1/4 inch right under the cross bars and welded them back together. Cant even tell haha. When are you going to put up a video of yours?
@BreakfastBentoBox Tried once, forgot about it, let the smoker get too hot. I'm sure you can finish the story haha. I've been meaning to try it again.
@delmole85 have you any problems with the electric hotplates flipping the breaker with both of them on?? Also, do your hotplates have that safety mechinism that switches them off automatically after a certain amount of time or if it is too hot too long??
@BreakfastBentoBox Luckily I haven't had a problem with hotplates flipping breakers. I do use a very very short and very thick extension cord though. If you are running 3000watts of power you need to have a very thick cord. Either that or you could run a cord for each hotplate. As far as the safety mechanism that shuts the burners off, the one i use for the chips never seems the turn off while the second one does. I usually don't have to run them full blast though so this might be the reason.
I REALLY ENJOYED YOUR VIDEO AND I AM IN THE PROCESS OF MAKING ONE FOR SMOKING JERKY. ONE QUESTION.....DID YOU SEAL THE DOOR SOME HOW TO KEEP SMOKE FROM COMING OUT THE FRONT. OR HOW DID YOU GET A TIGHT FIT
@chinoyesca If you look at where I cut the shape out for the door, the remaining wood closes back into the opening that is left. Then i added a rectangle of wood to the outside. This actually kept the heat if very well. It did however add add for some thin close celled weather striping. Since the temperature only gets to about 170 you don't have to worry about it melting. If you will be running into hotter temperatures you could tack on a gasket from an oven.
@Boosted98gsx I got the racks from ovens that i would see on the side of the road as well as from the scrap yard. We have a couple very close to my house where they let you pick through stuff and buy it by the pound. there isn't really much of a frame, the whole thing is made of one layer of tongue and groove carsiding. For the corners i just ran the wood through the router to cut another groove for the tong of the next piece to fit into. Its pretty a pretty simple design. Sort of winged it

@omiblingbling Thanks for the comment! I wouldn't well your wife that though haha. It was actually really easy to build. If you are planning of building one, the only change i would make to my design is a little doggy door at the bottom so i can change the wood chips without opening the whole large door.
