Thanks Mrs. Sinha for the recipe but just FYI this is actually more like hydrabadi biryani than Kolkata biryani. There is no use of tomatoes, cilantro or mint in Kolkata biryani. Kolkata biryani is much more subtle, understated and flavorful. You require rose water, kewra water +/- meetha attar to get that flavor profile.
I am sorry, this isnot even close to the biriyani that we have in kolcatta resturents,kolcatta people do not use star anis they use kabab chini, you have also not used kewra water / misti ator as well , this is a very basaic manso bhat mix :-)
I eat a total vegetarian diet except once a year, on my anniversary when I have lamb/mutton lol thanks for next year's recipe. Thank you for such wonderful recipes :)
