Yes you can use chopped ginger, just make sure it is chopped very fine. And you can replace the wine with one that has a low alcohol content (under 20%) :)
Vegetable oil is made up of a mix of different oils such as corn, canol, soybean and others. Peanut oil is made from peanuts. Both of these have a high smoking point and are good for frying. Once you start cooking with different oils and different brands of oil, you can tell subtle differences in both flavor and texture. After using different oils, I personally prefer to use Lou Ana peanut oil. But a regular (and cheaper) vegetable oil will produce about the same results :)

In this recipe, you can just substitute the wine with rice vinegar. And the chicken broth is just chicken soup (stock) without anything in it ( no meat or anything like that). You can usually find it in either a can or box :)

Yes garlic salt is just a mix of garlic powder and salt. And no question is ever stupid - it's more stupid not to ask :)

It's like the equivalent to bread crumbs in Italian meatballs - it makes the meat firmer and adds to the texture :)
