I hear a 25° Angle is the best way to sharpen it. They say any more is actually DULLING the knife. I'm not arguing with your technique, just what I heard.
yeah, 25 degree angle is for all around uses, 15-20 for increased sharpness, and 17 for a razer sharp edge. The razer edges aren't as strong and don't last as well so I usually go with 20-25.

15* for Japanese knives that have been sharpened on only one side.
For European knives, it is ~22*
