  • Very similar method to the way I was shown, by a restaurant chef, although I brush with Ghee a SECOND time, coil and roll it out again, and it makes it even more rich and flaky, I also fry with a little more ghee too, rather than totally dry like you would make a chapatti, so you dno't need extra ghee at the end that way.

    You can get a good griddle for doing them, a "Tawa" (pron. TAVA!) cheaplly from Indian grocers shops
