  • I tried this and it came out so well!! Easy recipie, thanks a lot! I also added a little minced garlic at the center of each before rolling the chicken.

  • hi there, just a few things about the rolls,... you may try it with lighter slices of meat,... it can be both chicken or calf, and fill them with some prosciutto, both stuffed or not,... and a slice of mortdella adding some small pieces of carrot and celery. Cook them into a pan with some oil, a few pieces of garlic and some white wine, they will taste great!

Perhaps a batch of arancini, deep-fried Sicilian rice croquettes filled with a ragu of ground beef and peas, stuffed calamari, or baccala prepared in any style. Anyway, just something to think about, a chance to do something different and have fun experimenting with.   • I have to tell you, my sister just had a baby, and I wanted to stock their freezer with meals, so I made: Sauce 101, Baked Ziti, and this Chicken Rollatini. I bagged up the extra sauce, and she has meal-sized portions of these dishes all ready to go in her freezer. (We ate the Ziti and some of the chicken the night I baked it - YUMMY!) So, in addition to the Stuffed Strawberries which are ALWAYS a hit, thanks to you, I also was able to help my sister out. I LOVE your dishes, and your videos!!

  • I know what you mean about the thick chicken. I can't stand it no matter how it's cooked. I love this recipe! I can't wait to try it. I am a little nervous about the white wine because I don't drink wine so I don't know what would be a good wine. Any suggestions?

  • If you don't want to use wine you can use chicken broth. I have cooked it with both ways and it comes out great either way :)

  • I think one suggestion might be to get a bit different background music. It doesn't need to be fancy, but I think it would greatly improve the feel of the video if the music was changed. Some classical string music would really accent these videos.

  • music is a little tough because of copyright issues.

  • I can understand that, but I mean, classical music is free domain. You can use any one of the classical musicians you want, such as Tchaikovsky, Beethoven, Chopin, or any others you can think up.

  • Oh wait, just remembered. You may want to double check the music. Some may have copyrights, but most of those who made music around 1500's didn't get copyrights... not sure they needed them back then.
