Hi, don't know what quinoa you are using but the best way to cook it so it does not get mushy or sticky is to NOT use 2 cups water to 1 cup quinoa...the proper way is to rinse your 1cup quinoa till the water runs clear then let it soak for about 15 to 20 min. then drain and then add 1cup of water to your 1cup of quinoa bring to boil on medium then lower the heat and cook for 15min. It won't be sticky or mushy if you do it this way.

My husband has a aversion to coconut flakes, would you recommend any substitute? I can't wait to make these!! Thanks!

@meyerpalooza Try using shreaded or grated carrot. It's funny that there are a lot of people that don't like coconut...don't know why.
