Most professionals would not actually remove the chip in this fashion. They would use either a HOT AIR rework soldering station, that heats up all of the Chips Legs simultaneously or use a "drag" soldering method. Once the legs are all heated, they literally just flick the chip of the board with a special tool. Now, most hobbyists may not have the equipment, or the skill sets required for these other methods. So with the method I've shown here, it is accomplished using a regular soldering Iron.
