I'm hungry for bacon just watching this! Now curing some belly pork in the fridge - couldnt find the pink salt on the day - will it make much difference to the shelf life? and how long will it last without? Thanks.
@markaiwa I didn't have pink salt the first time I made bacon.It turned out really good, didn't have to worry about shelf life, we ate it pretty quick.
The next step is to raise your own hog! I've been making bacon out of our homegrown pork and it is mighty fine. Just picked up a meat slicer to I can crank it out faster!
@BolognaRingRanch Go for it, the toughest thing is finding pork belly. If you have any Asian grocery stores near by look there. Whole Foods also carries them.
@SmokeyGoodness I've smoked it on my gas grill, it turned out pretty good. Look back through my videos and you will see the first video I made where I did it on the grill with a smoker box filled with hickory chips.

Tom, that bacon looks fantastic.
I may have to see if I can rig up something for my Brinkman offset to make it easy to hang the pork belly.

I broil mine in the oven, and agree makes it more crispy and uniformly cooked.
