since he asked the lady what burger she wanted the helper knew what burger to use. Since his hands cover you cant see and gives you the illusion of him pulling a burger off the poster.

ok here is how he does it. notice he slaps the wall near the top no where near where the poster is. He also just lifts the bottom of the poster...not the part where the burgers are. After the wall turns on stage someone sneaks and attaches a little seat so when the wall rises you cant see them. Now where attaches the poster is important because the bricks are loosely fitted. So when he goes to the burger the first time the person knows where to push the burger.
