Other, highly celebrated 'modern' restaurant fare--aka: post-nouvelle cuisine--literally drives me away from restaurants all together. I am truly disgusted by the look of plates piled with hype. Conversely, P. Boucouse is surrounded by a cornucopia of truly amazing food resources, and he has earned the respect of 'foodies' and spectators alike.
Let me tell you that if you worked for a lousy french restaurant that is quite normal. But if you work as a cook in a restaurant Bocuses, or l'Oiseau or any great restaurant, believe me you won't be treated like dirt because they need your skills and won't risk to loose you. That's the difference between being a "comis" an qualifyed apprantice (fresh out of an expensive private school) or a skilled cook.
@havoc151976 His way is ergonomic: you won't get the skin of your index finger torn apart when you spend hours and hours cutting stuff nonstop. You can hold your knives anyhow you like at home, chopping your single onion into your soup.

I've seen my share of what you are describing but I honestly think thats how it always looks in Bocuse's kitchen. He is the master of food, I dont doubt he is the master of discipline.
@DaMainDude he has them working like obedient none faultering slaves while he lounges about drinking a glass of wine....not like ramsey who walks around with a baseball bat beating up his employees
this makes me sad, I wish my kichen was as clean as this, and my cooks had this kind of determination. of course I dont have an army like here, but we try.
Ìm a dutch cook ( still a nivou 3 student but hey.. ) im inpressed that he still has the time to go on a picture with his guests and i admire his wonderfull cooking techniques . would be nice to eat at that restaurant !
