You can find a crack by gently stepping on the durian with a shoe on. If it is fresh, then you can feel a crack. If it is frozon, defrost it and step on it slowly by putting a little weight at a time. then you will hear "SSSS". That's the moist from the shell being pushed out from inside. you will find a crack at the "butt" of the Durian.
Also, pick a durian looks full at all sides. So that you dont get a halo compartment.
The trick to properly opening a durian is to look at the Bulging part of the durian. In the MIDDLE of the bulge, running from the stem to the tip is a barely visible line. Use your fingers or a butter knife and split along this line. You may miss it the first try, but its there and near the middle. You can sometimes see the spikes point in opposite directions along the line. Thats where you split it and open. LET THE DURIAN COMPLETELY DEFROST to allow it to open easy.
Let cool running water run throughout the durian for 15 minutes to do a fast defrost. The middle will still be hard so it wont completely split apart, but you can pry open all the bulges to get to the good part.
I'll definitely be trying the fruit again. I may or may not put it on video. Don't know, but yes, I'll look forward to trying it totally unthawed and ripe before I try it.
not bad for a a first timer...anyway you don't really need to use a sharp knife to open a durian.a blunt butter knife would be much better and safer.the real trick is finding the comparments and crack usually it starts at the bottom.then just wedge the butter knife way up...
yes, you did suggest the fruit in a comment on my squid shreds video. A couple of co-workers of mine had suggested it to me about two months ago. I finally got enough courage to buy one and try it. To me it wasn't as bad as people said it was. in my opinion of course.
King of Fruit! I tried durian ice cream a few years ago (picked up at an Asian market) and it was surprisingly tasty. Also try red bean or green tea ice cream if you get the chance.
