Well, one plausible explanation for cancelling Chuck is the deviating story lines. Season 1 featured everything that made Chuck an enjoyable show: Chuck's confused about his new life revelations, Sarah is the agent with a li'ol girl behind the mask, Casey's Casey. It's Chuck versus Chuck 2.0. Then, in following seasons, the cover is blown and then you find yourself watching Buy More become some sort of spy bee hive. I mean, come on. It's so easy to see the show stretched its material.

@JDioon I think that the real charm of Chuck is that despite that the overall plot is really over the top, its character relationships are, in contrast, very believable. You're never meant to take all the "spy" and "agency" stuff very seriously, because everyone should know that the real CIA has no relation whatsoever. So why not make the Buy More a super-secret base with miniguns? But you can take the friendships and relationships seriously in this OTT setting.
