I too was miffed by the single wing concept. But, it has such a deep hidden meaning behind it. I've learned the sheer brilliance of the entire symbolic meaning of it. The Japanese always find ways to keep it's audience thinking deeply into the entire plot of their stories.

It's no coincidence that Angeal has a White "Right" wing while Genesis and Sephiroth showed Black "Left" wings.

I'd tell you but, I don't want to spoil it for you. ^_^
