Okay, now that I actually have watched the entire video, I guess my question is actually "Any idea if someone would be able to pull this off on an MPC without a touchscreen peripheral?"
I know it's an old post I'm replying to, but yes, this would be incredibly easy to implement with a cheap midi knob box (something like a phatboy, bcf/bcr2000, or even a NanoKontrol if you can plug USB controllers into the MPC)..
Even then, you could easily program it to work with 3 or 4 knobs.
Check out CurtisHeavy if you have an iPhone (the makers also do a lite version which is actually really nifty), and it will really help to teach you the fundamentals of granular synthesis

how do you assign a cc to loop start. you can't set it on the mpc 4000 in the modulation screen. Are you using sysex? or are you using sample start?

It can be accomplished on any sampler where u can lock the loop time.
