Totally agree. Unfortunately there seems to be a trend with this kind of tutorial/video to show the ENTIRE process sped up to extreme speeds; even hour long (or more) videos that I have purchased do this and while it's nice to see the whole thing play out from start to finish, ultimately you can't learn anything from it because it goes far to fast to see how the artist puts down brush strokes and what their techniques are, which is the important bit!
You don't want to copy their brush strokes you need to make your own style the videos serve their purpose, to show you a general idea how and provide an entertaining experience while at the same time showcasing the art and artist.
The act of painting is a skill which can be learned and taught. What you are referring to is using that skill to create art; something which is not so easily taught.
That being said I do not want to copy their brush strokes as a way to copy their talent, but to learn their skills so that I can use them to create my own style and express my own talents.

great job on the core shadow vs direct lighting! Have you considered using stronger backlighting? I feel if used correctly without going overboard, it brings the character out more.
what brushes are you using to make this? i've been tryin to decipher these type of styles for the longest time but i can never seem to figure em out :[
