I think it seems a little odd because she so rarely laughs on the show (in fact aside from this scene I can't remember anything more than a giggle from her on the show). She's usually very deadpan.
@Shular67 you mean you don't remember her non-stop laughter in the episode where they went to see the Bangles and Sookie & Lorelai wound up with the worst seats ever? that was even funnier
