In Manila, those ingredients are a little expensive and not readily available in public markets. Restaurants might be using the ingredients you mentioned.
I know that we Filipinos traditionally use ground pork in making Shanghai (lumpia) and occasionally, we use ground beef or even ground chicken.
But I wonder if anyone has been bold enough to try other kinds of meat such as ground lamb, seasoned with rosemary, marjoram, and oregano. Or even ground turkey.
Or for seafood lovers, lumpia that has a fresh salmon strip/slice (about the thickness of a pencil), topped with ground shrimp for filling, seasoned with fresh dill, white pepper, and salt?
im thinking of using mutton/lamb as well ;-) and i always put basil rosemary and oregano or cilantro in my lumpiang shanghai may it be made out of beef or pork or chicken :-)

i cook the recipes a bit first so theyd get a head start in cooking before i wrap them
cus usually when i deep fry em, the insides dont get cooked all the way.

@vern13603 Your oil isn't hot enough. If your oil isn't hot enough it soaks into whatever you're frying.
