I think it does that because the hot water is heavier than the LN2 and as it travels down through the pooled LN2 it causes it to flash-boil and because it sinks, the bubbles of Nitrogen gas carry the rest of the LN2 skyward, which turns to a gas as it rises through the much warmer air.

Am I very far off base, Steve?

Well, how poisonous it is exactly depends on the metal of wires that went into the pickle, but even if it is copper (copper oxide is a poison), i think the concentration from such a short experiment isn't immediately toxic. The electricity itself can't do much more harm than frying it, which does produce a mild cancerogen, but that's only bad in the long run.
