ok here are somthings you might have done wrong:

Didnt start l4d2 from the page with the steam appid at 0:46 (you need to start it there)

You didnt type sv_lan 1 into the console

and you have to play singleplayer only

the full gore version is much goryer then l4d 1 but the low impact version is less gory then l4d1 :(

i have tried but the game kicked me after about 1 minute so to multiplayer you just change back to 590 but no gore :(

What kicked you? The server for having the incorrect version or something? Cos' if you play with other people who have the 510 thing, there should be full gore.
