Looked ok, didn't look as thought you removed the membrane on the back of the ribs though. This is a must to get some perfect ribs. The membrane, if left on, prevents smoke fully penetrating the meat.
I enjoy the videos, but I am a little confused as to why this method would be any better than cooking those babybacks on a traditional weber type grill using indirect heating? I assume this is more steaming than smoking/grilling?
@jwlrymkr The point of this video is to show how versatile the dutch oven is... I love smoked & barbequed foods and use several different types. Folks may tend to shy away from using dutch ovens, thinking they'd have to give up that great smoked taste... Not true.

@sethzky77 So it doesn't rust, but also so it gains a non-stick surface which is equal to or superior to any teflon surface.
