  • Its clear from reading these comments my family has corrupted me by leading me to believe pink meat isn't cooked and shouldn't be eaten until cooked. I don't know why I believe this, but it's like a religion for me and its gonna be tough to break free from. I was told almost raw meat could give you tapeworms and or make you sick and I guess that's why I cook the pink away.

  • try this it's amazing! 1/4 cup mayonnaise 2 teaspoons minced jalapenos 2 teaspoons jalapeno juice, from minced jalepenos 3/4 teaspoon sugar 1/2 teaspoon cumin 1/2 teaspoon paprika 1/8 teaspoon cayenne pepper 1/8 teaspoon garlic powder 1 dash salt

  • Salt and a teaspoon of extra vergin olive oil on my steakes...nothing else (period)

  • Wow. I've been making a "ranch" dressing in the same way, thinking it was just a jig up of ingrediants that tasted good, rather than something that a chef would find credible in the kitchen. I use Whole egg Mayonaise, Sour cream, Chives, minced garlic, Salt, pepper and lemon juice. It tastes amazing and is good on EVERYTHING. however, I'm wondering how long it can be kept for in the fridge? because of the Garlic, I'm worried about bacteria setting it. Any advice, please?   • I would love to try this with mayo, Korean fermented chilli paste and the oil from a far of sun dried tomatoes. Skirt steak is a nice, inexpensive flavorful steak. I have to try this kobe version sometime.

  • we all argentineans accostumed to barbacues that take minnimum 1 hour of cooking time think americans with their charcoal, gas fueled, open flame grills burn their meats...even when they cook hamburguers and winnies we think you burn them to open flames...we don't cook to open flame because technicallly applying direct flame to a meat burns it, it's a sort of chemical law...but again it could be subjective o semmantical too...in postmodern times...

  • @jonathano1989 gee I highly respect it, lived there for a decade and loved it but that doesn't preclude from saying what I like or don't like, I would include any critique referred to a cooking method as a very light, superficial critique...not a serious matter...beside it's a quick observation of most of my american friends when they cooked...respecto is not involved just different tastes...

  • @elmetodo3 Actually, charcoal and gas grills do exist past Mexico. I've seen quite a few outside of US. Lot of people would love to use firewood to do my bbq, but most can't do it unless they go to camping grounds of sort. Gas and charcoal grills exist for convenience at home. Last thing anyone would want during their bbq is neighbors calling the fire department after seeing smoke coming up from the yard. That's how I see it.

I lived there BUT after trying so many of my friends barbacues I wrote what I wrote, a proven pretty accurate generalization. The problem with american bbq's starts with industrial design. Shitty kettle, propane based grills = rushed cooking = flame cooking. The humblest of grills in Argentina are made of refractory bricks and pulleys to raise o lower grill to the coals. We ALWAYS use fireWOOD.simple!

  • I make an awesome salad dressing with mayo. Mayo + Lemon Juice + 3-4 gloves of minced garlic + Salt/Pepper + splash of Worcestershire sauce. It's very very zingy and not for the faint of heart. But goes brilliantly with a Romaine lettuce salad. Kind of reminds me of a souped up Caesar salad dressing, but with way more zing. I'm still waiting on some Tex-Mex style recipes from you, Chef! *wink*

  • @elmetodo3 Not burnt, just has a delicious crusty outside. Not raw, just delicious med-rare cow(People, including myself have eaten raw beef). Steak should never be soft on the outside and grey in the middle, at least in my opinion.

  • @japaneseaggression First off, it depends on the cut of meat, which he was using a cut of meat that usually has sauces on it.  If you get something extremely expensive you usualy just grill it properly and the juices are enough flavor to satisfy... but I'm pretty sure chef john knows what he's doing... i mean... how bout you watch his Parmesan Cobbler episode just to see how amazing he is.
