The "rock step kick step kick hitch kick step " actually is rhythmically counting off what you're doing with your feet. It depends on how you think (with numbers more than words or vice-versa).

There is 20's and 40's Charleston. This is the version that became popular in the 1940's alongside Lindy Hop. Also, the action should not come from lifting the knee when kicking (the knee should lift, but not as high as they are showing it.) Originally, partner Charleston (from the 20's) was done facing each other, just offset a little. There were two types: Uptown (where Harlem and the Savoy Ballroom were located), and Downtown (Done mostly in Caucasian Ballrooms).
This is the step version. The break version has a "broken nee" and lots of classic Dance Music moves came from it like heel toe side "walking" Jump Style, DnBStep, CripWalk. Yes the less glamourous but original Charleston derived nonetheless.
