@c0manche lol Guy Grossi (the noisy italian) is a fairly well known Italian chef, the other bloke runs a vinyard. So it might be the Vinyard owner's recipe, but I guarantee you Guy Grossi does a better job technically (and is more efficient, it'd probably take the other guy 15 mins just to dismantle the duck). In this case Guy Grossi is the expert.
