  • Mexican Cuisine is the best in the world according to food critics accross the world.It has replaced Italian has the # 1 diverce & delicious mixing accent mex/indian & spainish also some french influence to it making it the BEST!

  • My mom keeps the cream out and instead uses a little bit of cheese and adds potatoes. Sometimes she uses Chile Pasado instead of Chile Poblano.

I have immence respect for you. i think in the coming years, you will be even more of a houe hold name than you are now.   • I don't think he was referring to heavy cream. Mexican cream can be like sour cream only better and you can find it at any mexican market in the 'deli type' counter where they sell the cheeses and cream. There are different ones like oaxaquena and some might be crema centro americana. They are all sort of similar. also you can find jars in any hispanic section of supermarkets of a brand called cacique it is crema mexicana too this type tastes a lot like milk (not salty) but it's really good.

    Except for 2 things:

    1. After the chiles are blackened, throw them into a plastic bag, close it and let the steam take care of that skin.

    2. My mom always put some diced tomato in her rajas.
