Very simple, but very effective. Muay Thai, contrary to what most people think, it uses very simple strategies that work amazingly good. For the second combo, you're suppose to slide back, not step back with the front foot. Only step back if they kick with their left (assuming you're both orthodox)
actually what you suggestion is the standard method, but if you see if coming, and your opponent is slower than you - you can set it up the way that I am teaching in this video

Only use 1 hand to sweep the kick though. Last one, with the check, sometimes the kick looks like its going low and comes higher, you want to be ready to block head kicks at the same time, just put your forearm and shin close together and you get a shield, if the kick goes high, tap it down with your free hand while keeping your shield strong. VERY strong defence. Using both styles of blocking would be better, also intercepting blocks and parrys, slipping and rolling.
Just some thoughts. Taking/Blocking with that shin, "checking", hurts ALOT full contact. You need lots of repetition to get used to the impact, fighting someone with shins that are use to thai kicks is like kicking a steel pole if you dont condition the shin. With the second counter you can sweep the leg as you step back, throwing him off balance while also giving the ability to keep your current distance, or get closer.
I'm not a big fan of catching punches with the opposite hand. A good fighter will throw a hook around your catch on the same side if he or she discovers you cross-catching. I.E., they'll throw a jab with the left and then follow that up quickly with a right hook working around the left hand you just caught their jab with.
if you're fighting someone who practaces muay thai, then you won't get a right hook (or left hook if they fight southpaw). in muay thai, there is no "cross-hand hook". all the hooks come from the lead hand. not to argue with you, you have a valid point. just wanted to clarify.

Moreover, the second counter demonstrated here is a counter used in Taekwondo, pali'chagi (except the attack and the counter are above the waist).
