Look, I've got a sister-in-law who's allergic to egg yokes! At least shrimp's got a lot of flavor WITHOUT the fat of egg yokes! How about giving some consideration for people who have egg allergies!
Ming Tsai, great recipe...innovative chef...now that the food pyramid has been rendered old, this new fried rice is interesting with more veggies. I'm Chinese raised in Hawaii, and I love my fried rice, rice in general. If you look at his cookbooks, you will see that he really knows his stuff. BTW, Nina Simonds, herself, has several cookbooks to her credit!!!!
I respect Ming Tsai as a superb chef, but he is promoting dietary advice that has some flaws in it.
1. The health benefits of Canola Oil are debatable, and there many who think it is actually harmful.
2. Brown Rice, though having more fiber, should not make up the bulk of your calories, as it does in this dish, because too many carbohydrates, whether from refined grains or whole grains, can have deleterious effects on blood sugar and weight.
@alphacause I dont think he was suggesting that a bulk of dietary carbohydrate intake come from the source of brown rice only but rather suggesting it as alternative to whiter rice.

if u eat nromal food and not worry about wht u put in it so much...this looks good but its kinda fusion i mena not tradtional, u know the chinese eat egg rice and scallion friend rice for breakfast (not all ppl do i know) a popular uni lunch dish in china is eggs with tomato ( fried together) I belive everthing in moderation u know the jaoanese they control prtionsize and i think this is key not nessersaryly wht u eat.

I like Simply Ming, I am not too much into brown rice when white rice is the norm, but I suppose I could try it. I definately would not use celery though because I hate it and carrots my wife does not like too much. I did not know you could use Kale as a vegetable, but more like a garnish like parsley or some thing... interesting...

If you cook brown rice, you need to soak it overnight before you cook it in a rice cooker. Brown rice is a lot coarser.
