(Kueh Chang)Bak Zhang a.k.a Glutinous Rice Dumpling Recipe Ingredients : 100g dried mushrooms (optional) 1kg lean pork 1-1/2kg glutinous rice 2 tsp salt 250 - 300 shallots (sliced) 200g preserved winter melon (diced) 30 pieces pandan leaves (or 60 bamboo leaves) 20 pieces hemp strings 5 tbsp lard or oil A few drops of blue food coloring from the Bunga Telang

    To boil the wrapped dumpling - immersed into boiling water, estimated 45mins to 1 hour depending on the size of the dumpling.

    Its takes about 30 to 45mins to cook the dumpling. If you have a big pot and you immersed plentiful of wrapped rice dumpling, it will probably takes a little longer 1 hr+ to cook through, be sure that all corners of the dumpling is immersed in water.
