Cats are individuals. Some don't like it when people touch them while they're eating; some don't mind. Occasionally, my kitten won't start eating if I'm not petting her. Siamese are very 'talky' and these ones may just be saying 'yum'.

I suggest you separate those kitties during feeding. There is nothing unusual about that noise. It's the exact noise one of my three cats makes when he's defending food towards my other two or myself. I feed them in different locations so he is calmer now.
