Here's the most logical reason. Since her weakness is gluttony and the greed of eating anything, she first started with her right hand. Chopped it and fried it. Then she put her legs in the oven and ate them. Dragging herself, she chopped her right arm and ate it. She then, couldn't get enough, she slices her stomach with her left hand and eats anything under her belly line. As she bleeds to death, she tears her other arm with her mouth and eats it. And the rest is up to death.

She would keep eating humans until there were only a few servants. Then she would try to eat her daughter but the two servants would help her escape and for that, they get eaten. When Meiko then find out she has nothing, she eats her right hand and when she's up to her stomach, her daughter appears and eats her and becomes the new Meiko!
