I think you should make it a Utility Turtle Fortress. It should have a variety of mechanisms in it including minecarts, redstone, and pistons.

Maybe have clip-fed TNT cannons. (protip: only LIT TNT is pushed by explosions. Underwater TNT does no damage to blocks as well.

Try to make a defensible fortress on/in it! Even from players! (at least pickaxe-less ones). Lots of tricks!

In regards to your next project, I suggest implementing redstone circuitry into it somehow. Not sure what you should do, but there are lots and lots of possibilities.

Also, if you want to download a texture pack to "spice things up a little" so to speak, I suggest checking out painterly pack. You can create your own custom texture packs there. I can guarantee that you will spend at least an hour creating it, cuz there are lots of options.
