It happens because the surface vibrates in a resonance frequency in which some parts of the surface move and some parts remain stationary. The moving parts push the grains to the stationary parts.
the simple answer is that every pitch has it's own vibration. When that vibration is applied the the metal sheet, the sheet shakes in response to each pitch's vibration. Because of that the salt is moved into pattern. A bit like taking a paper plate covered in salt and tapping it from below. You'll see the salt move away from the area you tap. The vibrations of the sound 'taps' the metal sheet in multiple places at once
I'm wondering how long people can hear the tone for? I know I have a somewhat higher range of hearing than most people I know (I can hear dog whistles) and could still hear the tone at 1:59, and that's when I stopped hearing it.

The higher the frequency, the more "information" can exist per cycle (hertz). Please note that the lower the frequency the simpler the design, whereas the higher the frequency the more complex the design. ~ signed, Captain Obvious. :p
