    1. He's using fillet which is as tender as it gets. Next step is minced meat! It will not get tough (unless he leaves it in the wok for too long and he won't).

    2. He's cutting the fillet twice to make the sizes he's after, so that sort of resets his first round of cutting with the grain. Watch again.

    But then again, fillet for wok ... I wonder what the Chinese would say hehe? Most other cut of beef would benefit from cutting of the muscle fibers as short as possible.

  • I agree with Jamiesyme999 I cook for Asians as in Chinese nationals. They use cheep cuts, slice thin across the grain with a starch coating. As far as the rest of the ingredients go they are fine since there is a wide variation of Asian styles. If you want western stir fry listen to loud mouth Ramsay. If you want real fined a native Asian chief or cooks and learn.

  • To those not making a tonne of money you do not need to use fillet mignon to get super tender stir fry beef you just need to use lesser expensive cuts and you toss in a mixture usually flour or cornstarch to make a coasting when you first cook to keep the juices in....In fact it would rarely be used for a beef stir fry in Asia even as they would prefer to save those cuts for BBQ etc....

  • @CollegeBoardSucks Things are so different around the world! Fillet steak is the same price as normal steak here (Nairobi, Kenya). My butcher practically begs me to take it! The reason why people don't buy it is the butcher likes selling it whole as opposed to chopping it in pieces like the one Ramsay is using. As whole it comes to about 1.6kg but varies.

  • @nolean99z Olive oil and vegetable oil not only cook at different speeds, but the groundnut oil doesn't add flavor. Keeps the ginger and sesame seed oil from being overpowered. As I understand it anyways...

  • One suggestion: oil goes in last, after the soy, ginger, and garlic. Oil creates a barrier that prevents water-soluble flavors from entering the meat.
