1. He's using fillet which is as tender as it gets. Next step is minced meat! It will not get tough (unless he leaves it in the wok for too long and he won't).
2. He's cutting the fillet twice to make the sizes he's after, so that sort of resets his first round of cutting with the grain. Watch again.
But then again, fillet for wok ... I wonder what the Chinese would say hehe? Most other cut of beef would benefit from cutting of the muscle fibers as short as possible.
In 2007, Ramsay admitted arranging for a biker to steal the reservations book from the Aubergine restaurant in 1998 and blaming the theft on Marco Pierre White, because he suspected Aubergine's owners were planning to offer his job to Pierre White
I agree with Jamiesyme999 I cook for Asians as in Chinese nationals. They use cheep cuts, slice thin across the grain with a starch coating. As far as the rest of the ingredients go they are fine since there is a wide variation of Asian styles. If you want western stir fry listen to loud mouth Ramsay. If you want real fined a native Asian chief or cooks and learn.
To those not making a tonne of money you do not need to use fillet mignon to get super tender stir fry beef you just need to use lesser expensive cuts and you toss in a mixture usually flour or cornstarch to make a coasting when you first cook to keep the juices in....In fact it would rarely be used for a beef stir fry in Asia even as they would prefer to save those cuts for BBQ etc....
@CollegeBoardSucks peanut oil, and the cheapest beef, usually eye of round, then marinated in water and baking soda for 1 hour, rinsed completely to get rid of soda taste , and voila, there you have chinese restaurant, buffet, take away, take out beef
@CollegeBoardSucks Things are so different around the world! Fillet steak is the same price as normal steak here (Nairobi, Kenya). My butcher practically begs me to take it! The reason why people don't buy it is the butcher likes selling it whole as opposed to chopping it in pieces like the one Ramsay is using. As whole it comes to about 1.6kg but varies.
Looks brilliant. It's not surprising the majority of Americans are complaining about it they have by far the worst taste in food in the world. All they eat is bland, unhealthy slop. Unless it has piles of melted cheese on it they aren't interested.
@Omniback20 It's not surprising the majority of Americans are complaining about it they have by far the worst taste in food in the world. All they eat is bland, unhealthy slop. Unless it has piles of melted cheese on it they aren't interested.
All of his videos look more like a mission briefing instead of instructional cooking videos. Action-packed dramatic stuff...like when the camera goes to the wok and flame for example...GO GO GO MOVE MOVE!!!
Wrong way of cutting beef strips~! He should ask a Chinese chef on how to cut beef to make it tender~ The way he cut those beef strips are for pork strips~ Beef and Pork are cut differently for the best degree of tenderness in Chinese cuisines~
it's enormously difficult to get a single Michelin star. To renew his third at Restaurant Gordon Ramsay, for 14th year in row - well the idiots writing in are literally not entitled to an opinion. You want to learn to cook, watch these videos THEN make comments like "how much oil." This is as it happens the perfect, classical, accepted Chinese ratio of ground oil. But how dare any moron even comment!
"would have been a shame. we need to stop killing the gordon ramsays of the world" Exactly. I have same energy. In America we call it hyperactivity. The rest of Western World says, "no such thing." Mr. Ramsay simply has - like all famous men, a surplus of energy ... Thank God.
@nolean99z Olive oil and vegetable oil not only cook at different speeds, but the groundnut oil doesn't add flavor. Keeps the ginger and sesame seed oil from being overpowered. As I understand it anyways...
@Ihasmoarface he's one of those people who cant stand still, if he was a kid today he would be put on drugs and told to be quiet. would have been a shame. we need to stop killing the gordon ramsays of the world
@FiestyCat86 im sure he doesn't mean spicy like a hot pepper, but the strong flavor that the ginger has is considered spicy. It's assertive enough I would say.
@FiestyCat86 Ginger is classified as a spice, so it's "spicy." In terms of flavor, it's spicy too: ginger, like tumeric, is often used in curries. Although heat is not synonymous with spiciness, I'd say ginger has a very slight tinge of heat -- especially in paste form, when that heat is slightly more pronounced. The word used to described chili heat in Chinese (辣) is also sometimes used to describe ginger, and compounds in ginger have been measured in Scoville units. So Ramsay is correct here.
@rodrigopanzer Grounded oil (kind of Chinese oil I think) ; soy source, salt, pepper, crushed ginger and crushed garlic, some sesame oil. I think that's all, hope I didn't miss any thing. Good Luck.
One suggestion: oil goes in last, after the soy, ginger, and garlic. Oil creates a barrier that prevents water-soluble flavors from entering the meat.
@madisonelectronic soy sauce for cooking is like cooking with wine... you dont but the best of the best, its still going to taste the same if you buy a cheap bottle or a wary high class one
