I have two Floridas at 14" and they do the same thing. They also swim in slow, graceful circles chasing each other's tail. They never snap at each other which leads me to believe this is a courting behavior.
You should add some powerheads to churn the surface a little bit. Looks a bit stagnant in the middle.
Just out of curiosity, what happened to the all sunfish you had? I think I saw one perch and one bluegill. I'm in the process of building in a 90 gallon native tank in my office that will be viewed from two sides. I was just going to go with panfish and perch, along with crayfish, but I might throw a gar in in there as well. I had one years ago and I really liked him. You did a very nice job here.
