I think an extra virgin first cold press olive oil would be better. The oil the lady is using looks almost clear. It looks like a blended oil or "pure olive oil"
if you roast them in a small deep dish with loads of olive oil, the oil will be flavoured with the garlic and you can use it in other things.....mmmmm.

Nice recipe/technique, but your garlic already had the green inner growth which is known to have off flavors. Just use fresh. Thanks for the vid.
