The leadsperson holds the head like that because cows will hold their heads high when they take intrest in their surroundings. Missy may look bony but for a dairy cow she has the right body conditioning. People show dairy cows in order to determine what cow has the best characteristics to produce the most milk.
@KAiliso they are boney because the breeders want them boney. it's their idea of beauty. plus they have this belief in breeding an animal that will produce milk before it sustains itself, holstein will generally milk on whilst losing condition, they won't cycle(go in heat), and will become susceptible to diseases. though it will get to a point where she will stop milking, body condition will be terrible and the cow will likely die. we have them at home, terrible stock from bad breeding

Really boney indeed , poor cow -.- But look at her fur , so shiny and looks so soft...
