@Hallamfoebell Guess that would depend on your own tastes. But as I said he is more into the science of food, why different aspects of food/food prep does as it does. And once you understand these aspects they can be applied to everything you cook. For the ones that ask why, why, why about everything, he answers the whys.

Informative video, nice tip on seaming the folds... but... way too many "laws/rules"! I use puff pastry instead of fillo on a traditional "banitsa" (pastry with feta and egg filling) every week, and I break all of these "rules" every single time, and my little triangle puff pastry "banichki" always turn out great... A person who's never used puff pastry is likely to be intimidated and never venture into it with all these "rules"... It's not as exact of a science! It's easy, fun and fast instead.

We have those tables at the school, although he makes puff pastry in a whole nother way that we do. But hey, as long as it comes out the same way :D
But we are told that there are two kinds of puff pastry, and that they are "rolled" differently :)

Like if you do double fold which will make 4x amount layer it will be
2 - 8 - 32 - 128 - 512 - 2048~ something like that... but yeah juss doing the double fold six times will give you around 2000 layers.......

if you practice it it doesn't take hours upon hours you could fold it a few times before freezing again if it's 1 cold enough or 2. fast enough

I agree. There's a lot of goofy stuff I don't really care for, but I'll take it because he gives you way more information than any other food show.
Although this episode is much more like a regular cooking show. I find that strange.
