  • As we all know from the cookie show, gluten is CHEWEH! Something puff pastry should never be.

  • The first time I EVER dealt with puff pastry, I went all the way and made it from scratch at home. I cried several times but ended up with awesome tastiness.

  • I would have saved myself so much time and trouble if I had just re-watched this before attempting my dessert.

  • Like if you do double fold which will make 4x amount layer it will be

    2 - 8 - 32 - 128 - 512 - 2048~ something like that... but yeah juss doing the double fold six times will give you around 2000 layers.......

  • if you practice it it doesn't take hours upon hours you could fold it a few times before freezing again if it's 1 cold enough or 2. fast enough

  • I've always liked Good Eats because Alton just doesn't tell you how the cook something, he gets into the details of why things work out as they do. You can apply what you learn from one thing to others. The science of food.

  • I agree. There's a lot of goofy stuff I don't really care for, but I'll take it because he gives you way more information than any other food show.

    Although this episode is much more like a regular cooking show. I find that strange.

  • @Hallamfoebell Guess that would depend on your own tastes. But as I said he is more into the science of food, why different aspects of food/food prep does as it does. And once you understand these aspects they can be applied to everything you cook. For the ones that ask why, why, why about everything, he answers the whys.

  • Hi, just read Alton's wikipedia, impressive. It's no wonder the presentation is entertaining and educational! Alton, you must be really 'puff' at that.

  • I'm training to be a patisserie chef and on the first day of college our teacher told us we were going to make puff pastry. It's honestly no big deal, after your first turn all you have to remember is to take it out the fridge every 10 mins and give it a quick reroll and another turn, which only takes about 60 seconds. I always make a big batch and keep it in the freezer so I always have some.

    the first few seasons are in this kitchen, the next couple are in a person's actual kitchen, the rest and up to date episodes are filmed on a set. there was also an episode where his own home kitchen was used, but im not sure when

  • Informative video, nice tip on seaming the folds... but... way too many "laws/rules"! I use puff pastry instead of fillo on a traditional "banitsa" (pastry with feta and egg filling) every week, and I break all of these "rules" every single time, and my little triangle puff pastry "banichki" always turn out great... A person who's never used puff pastry is likely to be intimidated and never venture into it with all these "rules"... It's not as exact of a science! It's easy, fun and fast instead.
