what are the odds that a poisonous mushroom might sneak into the harvest and go to the market?

@nepalnt21 There is NO possibility of poison mushrooms "sneaking' in.
Shitakes have a very particular look and once the log is colonized with the mycellium, nothing else will grow there until after the log is no longer producing.
