oh yea smack the table with the noodles so the flour can fly into the cooked food, smart guys lol

If you note, there is no flour on that side of the table where the cooked food was waiting to be brought out to customers. Additionally "smacking the table" with the noodles loosens up the strands from one another so that they remain distinct strings when cooked. The noodles were hand pulled from one piece of dough, they will need that extra step.
