If health was of no concern, what would you do to improve the soup?
I was thinking frying the onions in butter, or adding a few tablespoons of thick cream, or adding some goats cheese on top. Not to make it a creamy soup, but just a bit richer. So as not to overpower the coriander.

quite possibly the simplest soup. i never thought to use coriander as a major flavoring - usually a garnish. there's a lot of flavor and goodness in the stalks, don't be scared to use or eat them. thanks for the recipe.
Simple is often the best! Corriander really does ad a lovely flavour to the soup and as you have pointed out there is a lot of flavours in the stalks. Great tip and nice to hear from you.
i just tried this out! my laptop was on my kitchen counter and I followed this video step by step while cooking it and it came out fantastic! my brother thought i was brilliant for making such a great tasting soup lol

I made this recipe but didn't use coriander leaves, I just used coriander seeds. I'm one of those unfortunate people that for whatever reason perceives coriander leaves as having a very "soapy" taste. A lot of indian/asian dishes are almost impossible for me to eat for that very reason.
I have never hear that one before. However corriander seeds are a great alternative. The bad news for you is the fact you are missing out on some really deleciuos indian/asian dishes.
So the thought of eating freshly cut corriander must be a torture for you :(

I always add some garlic when frying the veg,it takes it to another level! And some white pepper,you should try next time tell me what you think
