From Disgaea one, yes. As for the Don Joaquin battle, I'm pretty sure it's not the song that plays during that boss fight. What I'm sure of is, it's the song that plays on the battle against Hoggmeiser in chapter 3 AND the battle against Kurtis. Can't remember the exact chapter for Kurtis.
this song never gets old cuz its so gawd dam rarely played T_T only at very epic moments like hard bosses or impossible stages with ally disadvantages and enemy ADvantages but i luv this song

Correct. Story-wise, it's been only played once. That doesn't count the battle against Zetta.

I went item god on disgaea 1 but its not played there
I fought some battles in the end of some chapters(prism rangers being one of them)
but not on any special boss
