  • She is confused with Boglionese sauce.

    This recipe cannot work with the pancetta and then the garlic. You must cook pancetta really good to get it to crust over and form material on the bottom of the pan to deglase later but since she has added the garlic with the pancetta it will burn and ruin the dish.

  • Pancetta? that's the problem with american italian cooking. it's such a pasticcio (means messy - or anything goes).

    Never use pancetta as they donh't use that in Italy.

  • pasta "alla abbiata"??? lol ... pancetta (=bacon) has nothing to do with arrabbiata sauce, a totally vegetarian recipe... bacon is used in "carbonara" and in "amatriciana" sauces

  • PANCETTA!!!!!??? I think you find that makes it amatriciana sauce.
