You could also do this with guava. My grandfather used to make this when he growing up in Puerto Rico. Guava paste with some smoked gouda. Yummm.

Here in Slovenia we make quince as a compote. Quince in Slovenian is kutina.

@lisaludwinski Ye it's amazing. The recepies very from family to family but you can add raisins, lemon juice, cinnamon, cloves and vanilla shugar :).
