You could probably improve the sound quality stabilising the electrical arc. Try hanging an earthed conductor above the coil- so the arc remains relatively stationary, and therefore the sound is generated from the same place.
(If you have a normal portable speaker and wave it around, the sound appears distorted, try it with a spare mobile phone.)

Google some schmatics, and its not that hard. Play The Monsters theme, on a coil like this, while handing out candy, its epic.

I think, you are generating a pulse signal with a mosfet for the coil and with an other mosfet you are controling the output.

I used IRFP 360 HEXFET N-channal. These fets are 23A at 400volts, Ipeak 96A.
This allows me to pump up the supply voltage up to 270 volts with no problem.
