  • Definitely Gordon's... NOT Italian! A real bolognese sauce, first of all, is not done in a few minutes. The worchesterchire and oregano (basil and/or flat leaf parsley should be there instead) are bizarre. And.... two garlic mistakes; 1st, garlic is rarely used in a true bolognese (good though), 2nd never ever crush garlic in a press... you lightly crush it with the flat of your knife, then roughly chop it. Gordon should and certainly must know all of that.

  • i've tried this and it is tastes very good. i don't get all the noise about the wocester sauce, it just adds flavour and he didn't claim to be a italian bolognaise. I also already altered the recipe for myself and i had no complaints so far.

    ok , you right, so dont call that dish bolognaise, cause bolognaise its an italian dish very different, we have a culture, call it pasta with worechester sauce not "how to make bolognaise sauce". Im italian and i confirm that dish is prepared in a slightly different depending on region, but the basic preparation is always equal, but certain ingredients completely change the dish ;)

  • this looks like a VERY a fast version of the Italian sauce. Bolognaise sauce takes 1 hour to thicken and blend all the flavors perfectly

    on the rest: i do it basically the same way! only i NEVER add dried herbs when frying, but only to the finished sauce! that way they do not turn bitter, which they otherwise might! also, basil fits fine + 3-4 other italian herbs.

    also, i let my sauce simmer for 30-40min. to reduce the tomatoes,of which i add more than in this vid.

    at the end i add paprika powder, a pinch of curry

  • There's never such a thing as a true Italian bolognaise. Even among Italians the recipe differs. Cooking is all about interpretation, there's no right and wrong, just as long as it tastes fantastic.

    If you look at Italian cooking videos around YouTube, they're full of "chefs" assuring that the "right recipe" is not the one in the video itself, but the one in their own mind, given by God himself.

    Again, I'm so sorry for every non-Italian around here; but I can assure you, not all Italians are as dumb as those selfish assholes.

  • Chill the fuck out people, its a british inspired bolognaise. He didn't call it Ragù alla bolognese and did not claim that it is authentic. Italian families incorperate different elements into this sauce and just because you don't include a western ingridient such as worechester sauce or oragono, does not mean u have to dismiss the sauce. If he had included beef stalk and a mirpoix, it would have been very simlilar to ragù alla bolognese.

  • For those who disagree with the bolognaise made by Gordon: I've been to Bologna and not every one make the same recipe for bolognaise, every family has its own recipe.

  • The real Bolognese from Bologna

    0.66 lb lean beef, 0.22 pork bacon, half a glass of wine (Sangiovese), 1 cup beef broth, 5 tablespoons of tomato sauce (concentrated), 1 onion, 1 carrot, 1 sick of celery, extra virgin olive oil, salt and pepper to taste. Procedure: oil, carrot, onion, celery (5 min) then add pork (5 min). Next add chopped beef (10 min). Next add the wine, let it evaporate, now add tomato sauce and beef broth, add salt pepper, cook slowly for 2 hours. Only with tagliatelle pasta:)

  • As Italian, I can say that the recipe is not bad. Every family has its own recipe for "Ragù alla bolognese", he didn't use celery, but we do, maybe there're too much carrots and too few tomatoes. The red wine is good, but the Worchester sauce no ._.

Actually I think Ramsay is a great chef, better than many others famous chefs (I like a lot the video about mayonnaise and choco mousse). That's his recipe of bolognaise and I'm sure it's good, it's just different form the one we cook here. However there isn't a unique recipe. Here, too, every cook has his own.

  • Actually, a good way (maybe not the italian way, given that there are a million italian families with dif recipes, all fking delish anw) to get the mince meat nice and small (crumbly) is to pour a bit of olive oil into a cold pan, and put the cold minced meat into the pan with the heat off. Then, you start to continuously stir the meat with a medium-low heat until its lightly browned, then you add the veg and continue with the recipe. :)

  • Not sure how I feel about the Worcestershire sauce but, otherwise, this is a solid recipe for a basic bolognese sauce. For everyone who is complaining about the carrots and the cream, both of those are essential ingredients and are found in every authentic bolognese recipe. It makes me wonder if your sum total exposure to bolognese sauce has come from either the crap you buy in a jar at the market or the crap you order at chain restaurants. If so, I am sorry for you.

  • majority of italian cooking uses carrot, onion, and celery for their base of the sauces

    these ingredients add natural sweetness to the dish which will be counter balanced by acidic tomatoes.

    pork is a sweet meat so it will also complement the sweetness of these 3 key ingredients.

    yet again there are thousands of different recipes for this such sauce and adding the classic english wurcestershire to an italian bolognese just shows how far the culinary practices have revolutionized

  • I'm Italian and i cook for passion, i can't find anything wrong in this recipe, the base of the sauce is right, there are houndreds of version of this sauce, and this is just another one, there is no such a thing as the ''original recipe'' there are many.

    This is the one he likes the most, personally i love the one with boar meat, wich is not exactly tradictional.

  • @Almlacher Yeah, especially considering that it's "bolognaise" and not "pasta alla bolognese". The different spelling suggests the English version which has carrot and red wine. It looks very tasty and a good change if you don't feel like an authentic pasta (Italian style, that is).
