Definitely Gordon's... NOT Italian! A real bolognese sauce, first of all, is not done in a few minutes. The worchesterchire and oregano (basil and/or flat leaf parsley should be there instead) are bizarre. And.... two garlic mistakes; 1st, garlic is rarely used in a true bolognese (good though), 2nd never ever crush garlic in a press... you lightly crush it with the flat of your knife, then roughly chop it. Gordon should and certainly must know all of that.
i've tried this and it is tastes very good. i don't get all the noise about the wocester sauce, it just adds flavour and he didn't claim to be a italian bolognaise. I also already altered the recipe for myself and i had no complaints so far.

Actually I think Ramsay is a great chef, better than many others famous chefs (I like a lot the video about mayonnaise and choco mousse). That's his recipe of bolognaise and I'm sure it's good, it's just different form the one we cook here. However there isn't a unique recipe. Here, too, every cook has his own.
Actually, a good way (maybe not the italian way, given that there are a million italian families with dif recipes, all fking delish anw) to get the mince meat nice and small (crumbly) is to pour a bit of olive oil into a cold pan, and put the cold minced meat into the pan with the heat off. Then, you start to continuously stir the meat with a medium-low heat until its lightly browned, then you add the veg and continue with the recipe. :)
to all the carrot&recipe complainers, you should better go to burger king think that´s ur style of food..... or maybe read a book about basic cooking ok and the you can post here again ;))

Not sure how I feel about the Worcestershire sauce but, otherwise, this is a solid recipe for a basic bolognese sauce. For everyone who is complaining about the carrots and the cream, both of those are essential ingredients and are found in every authentic bolognese recipe. these ingredients add natural sweetness to the dish which will be counter balanced by acidic tomatoes.
pork is a sweet meat so it will also complement the sweetness of these 3 key ingredients.
yet again there are thousands of different recipes for this such sauce and adding the classic english wurcestershire to an italian bolognese just shows how far the culinary practices have revolutionized

Not sure how I feel about the Worcestershire sauce but, otherwise, this is a solid recipe for a basic bolognese sauce. For everyone who is complaining about the carrots and the cream, both of those are essential ingredients and are found in every authentic bolognese recipe. It makes me wonder if your sum total exposure to bolognese sauce has come from either the crap you buy in a jar at the market or the crap you order at chain restaurants. If so, I am sorry for you.

majority of italian cooking uses carrot, onion, and celery for their base of the sauces
these ingredients add natural sweetness to the dish which will be counter balanced by acidic tomatoes.
pork is a sweet meat so it will also complement the sweetness of these 3 key ingredients.
yet again there are thousands of different recipes for this such sauce and adding the classic english wurcestershire to an italian bolognese just shows how far the culinary practices have revolutionized

I'm Italian and i cook for passion, i can't find anything wrong in this recipe, the base of the sauce is right, there are houndreds of version of this sauce, and this is just another one, there is no such a thing as the ''original recipe'' there are many.
This is the one he likes the most, personally i love the one with boar meat, wich is not exactly tradictional.

I love how people start bitching at this recipe. i didn't get any announcements on gordon's part to cook an authentic italian pasta sauce there, it's his interpretation of a goodamn bolognaise sauce. it's like watching porn movies and complaining about the "actors" being low skilled at hollywood-style acting. no one asked for your opinion on this being authentic, so stop complaining about it, holy shit.

@Almlacher Yeah, especially considering that it's "bolognaise" and not "pasta alla bolognese". The different spelling suggests the English version which has carrot and red wine. It looks very tasty and a good change if you don't feel like an authentic pasta (Italian style, that is).

real bolognese does not have carrots in it, it's white not red wine, it's cream not milk... and most importantly it has broth in it... but takes 3hours to cook while this one takes 20mins max so it's awesome :D
