Wow this is fantastic! I love how chunky and creamy it is. This isn't exactly low-fat but if you've ever had this stuff at a restaurant you KNOW how much butter and cream these dips can have. How many times do you really have to dunk your bread through an inch of melted butter just to get to the good stuff?? I can't wait to make this for my mum, she loves spinach and artichoke dip!

I love everything, you put into that dip, save for one ingredient, Artichoke. I've tried all types of Artichoke, but never liked it no matter how fresh or cooked it was, how it was prepared or what have you, I'm simply not a fan of it.
