That's just an animation gag; we already saw her face in 'A Fistful of Ed' when Edd dropped the book on her foot and she only had two eyes. Also, there's actually an earlier scene in the movie where Lee's face is visible for less than a second once again, when the wheelbarrow crashes into her between the sunflower patch and cow pasture. Once again, only two eyes.
