  • Yeah, I think it'd work great if you used Mustard instead of Mayo, I've had a very similar recipe but with mustard and it tasted really good. Chicken skin has too much fat and richness for me to consider using mayo on top of all that.

  • Mayo? Why not olive oil?

  • Chicken? Why not turkey or duck? (sarcasm)

    Maybe because it ads nice flavor and makes it easy to distribute the seasonings under the skin and makes the skin crispy and so on... :)

  • I just figured olive oil was a bit more healthy than mayo...but now u got my curious as to whether mayo does give it a crisp. I love crispy chicken skin. Esp the tip of the wing :-)

  • You could probably also just skip the oil/mayo part. A whole chicken w skin contains a lot of fat. But I don't think these guys go for the most healthy recipes but for flavor.

    I don't know if mayo makes it more crispy than just olive oil - but go ahead and experiment. Mayo is just oil and a bit of egg yolk after all :D

  • why do we have to rest the chicken for 50 minutes? isn't it best to enjoy it while it's hot?

  • If you cut into it when its really hot all of the juice will run out. If you let it rest then the meat relaxes and the juice stays in the bird better.

    2 teaspoon black pepper

    1 teaspoon sweet paprika

    1 teaspoon chili powder

    1 teaspoon poultry seasoning

    1 teaspoon granulated onion

    1 teaspoon granulated garlic

    1 pinch or 1/4 teaspoon Cumin

    1/2 teaspoon Kosher salt

  • Whats Kosher salt? I am in Australia.

  • it's a big chunky salt used to make meats kosher by drawing the blood out of the meat (says wikipedia) you should be able to get it at any grocery store.

  • Kosher just means it is acceptable to eat under Jewish law or something like that. Just use regular salt unless you are an Australian Jew.

  • Even though you are right about the meaning of the word Kosher , kosher in kosher salt has nothing to do with that. It's salt that's not as refined , hence after he said kosher salt he said granulated salt. So essentially , it's more coarse salt with bigger crystals than the ones in table salt.

  • I guess it's probably not "iodized" like regular table salt, although I've never checked. I keep it next to my kosher pickles.LOL. I can't taste the difference between kosher, sea salt, and regular table salt. I always thought it was salt from the Dead Sea, but that's probably ridiculous.

  • Sea salt is healthier, and actually alot saltier if you get it in natural form. :]

  • Sea salt/kosher salt is thicker-grained and from my understanding, not as "processed".

  • You can find it in Coles, you can use sea salt, but I found the kosher salt was cheaper.

  • Do you have two burners on your grill? If so, I would just do exactly like they did but only light one burner and put it on the opposite side. Our grill is gas aswell, a cheapo 75 dollar one and I use that method for their inderict heating instructions and the food still turns out great!

  • if your gas grill has 2 burners in it. preheat the grill then turn off one burner then place the meat on the side that you turned off which is call "INDIRECT HEATING" WHICH IS THE BEST WAY TO COOK ON ANY GRILL

  • No it will make the dish to "oil" like. use mayo

  • at that high of a temperature butter may burn whereas mayo will add moisture to the chicken. notice how he put the mayo under the skin as well as on the skin.the crispy skin will lock in the juices under the skin.
