Here's the reason why you'll almost never see a real katana fight. Unless one has the desire to kill (as was the purpose of the blades during many eras within Japan), there will never be a true fight. Also, although in movies they tend to show some pretty kick-ass fight scenes with swords... Once again they are cautious of everyone's safety and told to fight in a way that's safe. Therefore, you will never truly see a real katana fight.
