you want to use all the yeast its good for it ! she left half of it on the table!

the yeast will reproduce. wasting a little bit of yeast isn't a problem.

The airlock lets Carbon dioxide escape and no air to enter. Its an Anaerobic respiration with the yeast acting on the sugar to produce ethonol and CO2 (carbon Dioxide) Wiki for more details.
